Yesterday I was finally able to buy the spring form pan i've been wanting so I could start experimenting with cheesecakes and things that go in those type of pans. I am really proud of the way my first cheesecake came out, and everyone else seems to agree. I've been kind of intimidated by cheesecakes because everyone I know that's tried says they're really hard to get right, but mine seemed almost too easy. They just take forever! Anyways, it's almost gone so i'm taking it as a success!
I'm really liking this whole cooking kick i've been on lately. Next thing i'm going to try is Chicken Parmesan, which i've always loved, but have never attempted to make. I found a really good marinara sauce at Trader Joe's which i'm happy about because i've never found a marinara sauce outside of a restaurant that i've actually liked.
This is day two of my three days off and I still feel like it's not enough. I could have a whole week off and I still wouldn't want to go back to work. Job searching has been really slow this month, I only applied for one job today. Hopefully things pick up soon. I really can't wait to get my W2 so I can get some tax money back and hopefully finish up my dental work.

I've never understood the fuss everyone makes about how hard cheesecakes are to make. I find them to be VERY easy. As long as you take a little time to research the process then it works.

I've made two now and they've both turned out great. They're not hard at all, you just have to be patient. I don't know why everything seems to think they're so hard.
